Hotline Lo mein

Here is the Wok Seared Lo Mein case. Each case comes with 8 packs of frozen noodles; it will take 24 hours to thaw in the walk-in cooler. Make sure to date them during thawing process.

Using the safety cutter, open your box of ingredients, thaw out as many bags of lo Mein as you need for your next day’s operation.

Here is the Lo Mein sauce case. Each case contains 12 frozen sauce bags and each bag can make around 8 -10 bathes of HOTLINE Lo Mein.

Here are all the components that are needed to build a Hot Lo Mein.

You’re going to need 1 bag of fully thawed Wok seared Lo Mein, 1 bag of frozen Lo Mein sauce,  Vegetable Oil (Grab it from grocery aisle), a small container to heat up sauce and oil ,  safety cutter,  gloves, heat resistant glove, weight scale, tongs, and a half-sized hotel pan.

Hotline Lo mein

Step 1

Thaw frozen sauce by submerging under cold running water for 5-10 minutes until they are fully thawed.

Step 2

1.Open your sauce bag with safety cutter.

2.Place 1/3 cup of vegetable oil (2 oz) in a stainless pan.

3.Continue measure 1/3 cup of Lo Mein Sauce (3 oz) and pour into the stainless pan as well.

Step 3

Using the safety cutter to open your noodle bag, make sure you loosen up the noodles so the steam can heat through.

Step 4

Place the sauce mixture and the noodle pan in a rational steamer and steam for 5-6 mins or until the internal temperature reaches 165 Fahrenheit.

Step 5

Use heat resistant gloves to transfer noodle and sauce from the rational steamer to your work table

Pour the sauce mixture on top of your Lo Mein

Mix with tongs until all the ingredients are well combined.

Step 6

For Food Safety Purposes: You will need to send them to the hot case immediately to maintain temperature at 141F to serve Hot

Tip for the remaining Lo Mein Sauce

1. Use small deli containers with lids to finish up the remaining Lo Mein sauce for the future use.
2. Premeasure 3 oz of sauce and 2 oz oil in each container and store them in walk in cooler.
3. For food safety purpose make sure to name and date them
4. 1 bag of Lo Mein sauce should able to make 8-10 batches. You can increase the amount of sauce if you are doing larger batch.
