Cold Meal Assembly Process

Step 1

Pour entire bag of nugget into the mixing bowl

Step 2

Cut a corner of the sauce pack and pour entire bag of sauce on nuggets and mix well until all coated nicely

Step 3

Pour Fried Rice (or LoMein) equally into 4 Ready Meal containers at 0.50 lb (8 oz)

Step 4

Add sauced nuggets equally on top and center of Fried Rice (or LoMien) to 4 containers at 0.50 lb (8 oz) each

Step 5

Place product in appropriate cooling method until it reaches 41 degrees.

Step 6

Add sauced nuggets equally on top and center of Fried Rice (or LoMien) to 4 containers at 0.50 lb (8 oz) each

Step 1

Wok Seared Lomein Noodle- each case comes with 8 2lb bags. Note: Lomein needs to be defrosted in Refrigerator for 24 hours before use

Put on disposable gloves and use a safety cutter to open each individual bag/packet. If needed, remove products from bags and place items in cleaned and sanitized containers while building the meals.

Step 2

Use a Scale to weight out each ingredients

Place container on scale a zero out (tare) scale. *Repeat this step for each step requiring to add a specific weight requirement into the container.

Step 3

Use 1 bag/ 2 lb of Lomein (defrosted), 3 oz of sauce (defrosted), 2 oz of oil and 4 oz of each vegetables (about 1 handful ) for 1 half size hotel pan

Place all vegetable on top of the noodle combine oil and sauce in the same stainless container.

Step 4

Heat noodle tray and Sauce in Steamer for 4-5 minutes/ until internal temperature reach 165F or higher.

Step 5

Pour Sauce over the Noodle, use tongs combine and mix well

Step 6

Transfer to appropriate chilling fixture to bring product to 41 degrees

Step 7

Once product is chilled, place appropriate amount of product in foil container and place ready meal and price label per normal

Step 8

Place in allocated space within RM Entrée Schematic

Close all 4 containers with lids and label accordingly to Ready Meal Program.

Once product internal temp reaches 41 degrees, place within your Ready Meal section of your department.
