Chicken Entree and Fried Rice
- Here are the components you will need to prepare this dish.
- One frozen chicken bag
- One frozen sauce bag
- A fully thawed wok seared fried rice pack “ Previously frozen, slack out in Walk in Cooler for 24 hours ”
- Black and gold trays
- Four lids
- Ready meal sticker
- Safety cutter
- Scale
- Gloves
- A mixing bowl and spoon
- to mix your chicken and sauce together.

Chicken Entree and Fried Rice
Step 1
Thaw frozen sauce by submerging under cold running water for 5-10 minutes until they are fully thawed.
Step 2
Use a safety cutter to open the rice bag and place 8 ounces of rice at the bottom of the tray. Each rice bag is going to make four different meal trays.
Step 3
Using the safety cutter, open your frozen chicken and sauce bag.
Combine them in the Mixing bowl , and mix them until all chicken and sauce are evenly coated”
Step 4
Place 8 ounces of the mixed chicken on top of the rice.
Rule of thumb: 1 bag of chicken and 1 bag of sauce will get you 4 different meal trays.
Step 5
Close your meal tray with the plastic lid, and put your ready meal sticker right on center top.
Print out your white deli scale label and wrap near bottom center of the tray
Transfer the trays to a blast chiller or walk in cooler until their internal temperature reaches 41 Fahrenheit or lower, then you can transfer it to your deli shelf.

Best of Practice
- Make sure to squeeze as much sauce out of the bag as you can
- Frozen rice bag takes 24 -48 hours to thaw so Plan ahead so you don’t run out of product
- This is a cold meal prep, do not steam or heat up any ingredients. Keep cold to prevent growth of bacteria.
