Chicken Entree and Lo Mein
- Kit Introduction
There are four different flavors for the chicken meal kit (sweet & sour, honey sesame, orange and General Tsao) this training video we will demonstrate it with one of the kit (Sweet and Sour Chicken Meal Kit)
Open the box using your safety cutter. There will be 8 bags of Frozen sauce and 8 bags of Frozen chicken.
Here is the Wok Seared Lo Mein case. Each case comes with 8 packs of frozen noodles; it will take 24 hours to thaw in the walk-in cooler. Make sure to date them during thawing process.
Using the safety cutter, open your box. Thaw out as many bags of Lo Mein as you need for your next day’s operation.
- Ingredients
Here are the components you’re going to need to build your cold chicken entrée with Vegetable Lo Mein:
1 bag of frozen chicken nuggets, 1 frozen sauce bag, 1 fully thawed Lo Mein bag, mixing bowl and Serving spoon for mixing your chicken and sauce, four black and gold trays, Lids, Ready Meal stickers, Gloves, Weighing scale, and Safety cutter.

Chicken Entree and Lo Mein
Step 1
Thaw frozen sauce by submerging under cold running water for 5-10 minutes until they are fully thawed.
Step 2
Open the Lo Mein bag with a safety cutter, place 8 oz Lo Mein in each tray and repeat 4 times.
Note: 1 bag of Lo Mein will make 4 trays
Step 3
Use the safety cutter to open your frozen chicken bag and sauce bag. Pour the entire chicken bag into the mixing bowl and pour the sauce on top. Mix them with serving spoon until all sauce and chicken are well combined.
Note:1 bag of sauce mixed with 1 bag of chicken will make 4 meal trays.
Step 4
Place 8 ounce of mixed chicken on top of the Lo Mein tray from step 2 and repeat that 4 times
Step 5
Close the tray with the plastic lid, and place the ready meal sticker on center top.
Print out your white deli label and wrap near bottom center of the tray
Transfer the trays to a blast chiller or walk in cooler until their internal temperature reaches 41 Fahrenheit or lower, then you can put it on your deli shelf.

Best of Practice
Please note, the Vegetable Lo Mein in this video was previously demonstrated in other training video under “Hot Line Vegetable Lo Mein Prep”. YOU WILL NEED TO CHILL THE VEGETABLE LO MEIN before use for the cold pack out meal.
Make sure finished meal tray’s internal temperature is 40 F or lower before you put them on the Ready Meal shelf.
